Eggless Oatmeal Banana Bread

It's not right now easy this is. AND, it

  • Is made of oat flour.

  • Contains no added sugar (unless you add in chocolate chips)

  • Can be mixed up in one bowl (+ bake in another = easy clean up)

  • Is egg-free

  • Has bananas!

I shall say no more.

Ingredients

  • Oatmeal, ground into powder, about 2 cups

  • Bananas, about 5 large (mashed) + 1/2 (sliced) for garnish

  • 4 tbsp ground flax seeds + about 6 tbsp water

  • 3/4 cup oil

  • 1/2 cup milk

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp vanilla essence

  • 1 tsp cinnamon powder

  • 1.5 tsp salt

Optional Add Ins

  • Walnuts

  • Chocolate chips

  • Raisins

  • Seeds (sunflower etc. etc.)

Steps

  • Mix the flax seeds and water and leave the mixture to thicken

  • Mash the bananas

  • Add in the oil, water, vanilla essence and milk, and mix well

  • Add ground oats to the mixture and mix again

  • Ditto with all the other powders - salt, cinnamon, baking soda, baking powder

  • Add in whatever mix-ins you feel like adding

  • Transfer to a baking tin

  • Slice up a banana and put the slices over the top for decoration

  • Bake at about 200C for about 40 minutes.

  • Voila

PS. I promise the bananas don't taste burnt...nor does the top, for that matter. It's just the color.
