Rawa (Semolina) Pancakes
What's that, a new recipe? But...didn't you say you'd failed as a food blogger in this article? I did, I did...and I'm still holding onto that 'status' - but you know who didn't make any such declaration?
My friend, Anjali!
She's started up an amazing YouTube channel, @LeafRecipes, that you rightfully just follow and not need to check out anything, here.
What I'm doing here is just reposting her incredible work so that on one of those days when you don't have bundles to browse on YouTube, you're not left starving.
Without further delay (I'm starting to understand those annoying food bloggers and their stories before getting to the point, to be honest) though, let's get to it!
Ingredients
Filling / patty
1 tomato
1/2 onion
2 boiled and mashed potatoes
A handful of coriander
Seasoning for the filling
1/2 tsp turmeric
1/2 tsp red chilli powder
1/2 tsp garlic powder / paste
Salt to taste
For the batter
1 cup semolina
1/2 cup yoghurt
1 cup water
1/4 tsp salt or to taste
Oil
Music: Mystic Musician: Jef Guitar Music: Gibran Merali
Procedure
In a bowl, add chopped tomato, onion coriander, mashed potatoes and the seasoning
Make the batter in a separate bowl by mixing 1 cup semolina with 1/2 cup of yoghurt and 1/2 cup of water
Let this batter rest for 25 mins
Next, add 1/2 cup of water to this batter and mix to form a thick runny paste
Add salt to taste
Put a nonstick pan to heat on medium flame and add 1/2 tsp of oil
Pour some batter on the pan and spread it to form a round circle
Make a patty with the filling mix and put it on the semolina pancake
Add cheese on the patty if you like (you should)
Pour some more batter on the patty to cover it
When the pancake turns brown on one side, flip it and let the other side cook
Ta-da!
It's really that easy.
As a parting shot, by the way - this is from Anjo herself: 'I'm an amateur cook learning new recipes everyday and bringing them to you If I can do it, then you too.'
Amen, sister!
You really have no excuse.
Go, try it, and do let us know how you go!
