Sweet Potato Spinach Boats

Experiments make me happy. Successful ones more so.

'Nuff said.

Ingredients

  • 1 sweet potato

  • Try to get one that's kind of long

  • Spinach leaves - 3-4 'bundles', washed and cut

  • Garlic - 2 cloves, crushed

  • Oil, for cooking - about 1 tablespoon

  • Dried red chilis - 2 - optional

  • Sesame seeds, for garnish

Steps

  • Divide the potato in two length-wise (sagittal or coronal, for my medical peeps!)

  • Place in a plate, sprinkle with water and cover with a glass bowl

  • Microwave on half power for about 5-7 minutes - you want to make the potato soft.

  • Remove, allow to cool and scrape out the potato, leaving the 'outside' intact - it's going to make your boat.

  • Heat the oil.

  • When it's hot (i.e. after about a minute or so), add garlic and sauté for about 30-40 seconds. If you're using dried red chili, add it now.

  • Add spinach

  • Wilt down the spinach

  • Turn off gas and season with salt and pepper.

  • Mix spinach with scraped out potato

  • Return mixture to sweet potato 'boat'

  • Sprinkle sesame seeds to garnish.
