Sweet Potato Spinach Boats
Experiments make me happy. Successful ones more so.
'Nuff said.
Ingredients
1 sweet potato
Try to get one that's kind of long
Spinach leaves - 3-4 'bundles', washed and cut
Garlic - 2 cloves, crushed
Oil, for cooking - about 1 tablespoon
Dried red chilis - 2 - optional
Sesame seeds, for garnish
Steps
Divide the potato in two length-wise (sagittal or coronal, for my medical peeps!)
Place in a plate, sprinkle with water and cover with a glass bowl
Microwave on half power for about 5-7 minutes - you want to make the potato soft.
Remove, allow to cool and scrape out the potato, leaving the 'outside' intact - it's going to make your boat.

Heat the oil.
When it's hot (i.e. after about a minute or so), add garlic and sauté for about 30-40 seconds. If you're using dried red chili, add it now.
Add spinach
Wilt down the spinach
Turn off gas and season with salt and pepper.
Mix spinach with scraped out potato
Return mixture to sweet potato 'boat'
Sprinkle sesame seeds to garnish.
